Sugar Mountain Trail Mix Recipe

Looking for a super easy snack mix that will be sure to be a hit with the kiddos and not bust the bank?  I gotcha!  My kids have tested this recipe and it is approved by all members of our house, the neighbors, dad’s work, church, well everyone really!  If you have a sweet tooth, Sugar Mountain Trail Mix will be your new favorite snack!

Trail Mix CoverIngredients:

  • 36 oz white chocolate candy melts (I used chips, you could also use bark to save $$$)
  • 1.5 cups powdered sugar
  • 4.5 cups funfetti cake mix (approximately 1.5 boxes)
  • Sprinkles!
  • 1 box Rice Chex cereal
  • 1 box Corn Chx cereal
  • 1 box Frosted Cheerios cereal
  • 1 bag of M&Ms

Kitchen Supplies:

  • Double Boiler or Microwave
  • 2 Paper Grocery Bags
  • Spoons, Bowls, Measuring Cups, etc.
  • Parchment Paper

Makes 36 half cup portions.

DSC_4657In a bowl combine the powdered sugar and the cake mix.  Set aside.  Open all the cereal and pour it into the paper grocery bag.

In your double boiler (or your microwave) melt the white chocolate pieces until smooth.DSC_4679 DSC_4682 DSC_4684 DSC_4691
If you notice it is too thick to drizzle, you can add a teaspoon of vegetable oil to the chocolate to loosen it up.

Once the chocolate is nice and smooth, pour it over the cereal!  This is the fun part.DSC_4701
Fold the top of the bag and shake!  Be sure the bag is closed tightly and shake, shake, shake.  This is an excellent time to find a fun song and make the kids help!  If it looks clumpy, just use a wooden spoon to break up the clumps and shake again!DSC_4706 DSC_4704

It should look like this.DSC_4711

Now add in the powdered sugar cake mix.  If you haven’t double bagged your trail mix, now’s the time.  If you don’t, you’ll have a nice dusting like snow all over your kitchen!DSC_4717

SHAKE! Add in the sprinkles and M&Ms and shake again!DSC_4720 DSC_4724

Once everything is all mixed up and the cereal is nice and coated, pour the mix onto sheets of parchment paper to let it cool.DSC_4730

Now use all your strength not to eat it ALL right now.   Hehehe.  When the Sugar Mountain Trail Mix is cool, pop it into snack sized bags and print out the bag topper.  Use staples or tape to attach the topper and get ready to be everyone’s favorite Valentine!DSC_4747

p.s. Special thanks to Rikki for all her help in the kitchen!  It’s hard photographing your own hands.   Not sure how the Pioneer Woman does it!  🙂
